Food Day Canada is the time and place for Canadians to celebrate our farmers, fisheries, suppliers, and purveyors.
We've put together our favourite summer salad, inspired by the produce from our Farm.
Mixed Green Salad
Summer Vegetables, Pickled Red Onion, Green Goddess Dressing
For the Salad:
1 head local greens
6 cherry tomatoes
1 mini cucumber
Or, use your favourite vegetables from your local market!
Prepare your vegetables as desired.
Green Goddess Dressing:
2 anchovy fillets
1 garlic clove
3/4 cup aioli or mayonnaise
3/4 cup sour cream
1/2 cup parsley
1/2 cup tarragon
3 tbsp chives
2 tbsp lemon juice
salt and pepper to taste
Put all ingredients into a blender or food processer and blend until smooth.
Pickled Red Onion:
1 red onion
1/2 cup red wine vinegar
1 tbsp sugar
1 1/2 tsp salt
1 cup red wine
1/2 cup water
Thinly slice red onion.
On the stove, put 1 cup red wine into a pot and reduce by half on medium heat.
Add 1/2 cup red wine vinegar, sugar, salt, and 1/2 cup water to the reduced red wine and mix until sugar and salt dissolve.
Add your onions into a container, pour over your liquid and let it rest for at least an hour.
Combine vegetables in a large bowl. Add Green Goddess and toss. Garnish with pickled onion for a pop of colour and flavour!
